Bubby Cookies
Ingredients
- 4.5 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- salt
- .75 cup oil
- .25 cup shortening
- 2 cups sugar
- 2 tsp vanilla
- 2 tbs orange juice
- 4 room temperature eggs
- 1 tsp cinnamon
- 2 tbs sugar
Recipe
Sift together flour, baking powder, baking soda, and salt. Set aside
In a mixing bowl – cream oil, shortening, 2 cups sugar, vanilla, orange juice, and eggs
Combine wet and dry ingredients and blend well
Refrigerate
Remove a small amount of dough into a small bowl and return the rest of the dough to the fridge
Make small balls and roll in mixture of cinnamon and sugar
Place on greased cookie sheet
Press down on each cookie twice with a fork, creating a checked pattern
Bake at 375° until dark
Notes
Stayed faithful to the Bubby Cookie recipe as retained by Miriam. Only slight changes were made in terms of spelling or exact wording.
The ‘until dark’ may be due to how Zayde likes them. You don’t necessarily have to bake them that long.
Can be made really big as well 😊
