Beat in egg and vanilla
Add dry ingredients and mix
Add chocolate chips and mix
Spoon out into appropriate sized cookies on parchment-paper-lined baking sheet
Bake for 10-15 minutes (depending on size)
Notes
Do not use quick oats! It will drastically change the way the cookies come out! See travesty
Doubles nicely.
Can be mixed by hand (how I usually make’m, actually).
One might be tempted to add extra chocolate chips. 1 cup is plenty. Trust me.
Baking time will depend on how appropriately sized your cookies are, as well as the actual oven temp (as always). I usually give a cookie in the center of the tray a gentle poke and if it seems baked I take’m out 🤷♂️
They freeze well, and are pretty good straight from the freezer
